Rice Noodles & Fried Fish

[Ssal-guk-su & Saeng-seon Twi-gim]

Instructions:

Rice Noodles Recipe:

  1. Put the cleaned chicken to boil.
  2. Put Star Anise and the bark of a cinnamon in a pan to toast.
    *Star Anise: A spicy that’s spicy and sweet. A strong and distinctive aromatic used to remove meaty smells. Use often in Chinese cooking.
  3. For a deeper flavour, roast onion and fresh ginger for a bit.
  4. Heat up cilantro seeds in a pan too.
  5. Heat up cilantro roots in a pan too.
  6. Peel the burnt skins off the onion.
  7. After slicing the fresh ginger thinly, easily remove the skins.
  8. Put the roasted onion to boil with the chicken.
  9. In a cotton cloth, after putting in the toasted cinnamon, star anise, cilantro seeds and fresh ginger, tie tightly so that it doesn’t unravel.
  10. Add the spice-pocket to the soup.
  11. Once the soup has reduced to an appropriate amount, salt it with just the right amount of anchovy extract.
  12. Remove just the chicken and shred it.
  13. Boil the rice noodles.
  14. Blanch the shredded chicken in the soup for just a bit please.
  15. To the cooked rice noodles, after adding the beansprouts, spring onions, onions and chicken meat, pour the soup over them.

Fried fish Recipe:

  1. Remove the innards while cleaning.
  2. Trim the fins away please.
  3. Remove the blood.
  4. Fillet the fish.
  5. Keep the head and skeleton for later.
  6.  In a mixer, add and grind red chilli, green chili and garlic.
  7. Julienne a welsh onion along its length.
  8. Remove the fine bones in the fish.
  9. Slice the fish into bite-sized pieces.
  10. Sprinkle salt and pepper.
  11. Pat dry the fish with paper towels.
  12. Coat with flour.
  13. Add anchovy extract, soy sauce and sugar (to a bowl).
  14. Add oyster sauce for a salty taste.
  15. Add just a bit of water and mix well.
  16. Once the oil is at the right temperature, put the fish skeleton to fry.
  17. Stir-fry the grinded sauce in oil please.
  18. Add the anchovy extract + oyster sauce + soy sauce marinade in.
  19. Add in coriander to your taste. (So none in my case. :P)
  20. Plate the fried fish.
  21. Fry the seasoned welsh onions and top it on the fish to plate and the fried fish is done.

The generous final dinner at Deukryang!!!
Now, there’s only eating it deliciously left to do~ ㅎㅎ

This time too, it’s unfamiliar Pear Noodles!

 

 

★ 배국수 ★
Pear Noodles

[Bae Guk-su]

  1. Cut the pears into appropriate sizes and grind it in a mixer.
  2. Mix in the ratio of one spoonful of vinegar to a pear.
  3. After adding ice and mixing somewhat again, put it in the freezer to protect!
  4. Grind/cut onions and garlic please.
  5. Put sugar + Soy sauce + cooking wine +garlic + onion together to make bulgogi sauce.
  6. Finish up by adding pepper.
  7. After mixing beef and the bulgogi sauce to make bulgogi, leave it aside to marinate.
  8. Julienne cucumbers.
  9. Slice thinly green chilli and red chilli.
  10. Fry garlic in oil to release its fragrance.
  11. Add the marinated meat and fry together.
  12. Fry the cucumber and chillies together in a separate pan too.
  13. In salted water, add the Jung-Myeon (noodles that are a bit thicker than somen) to cook.
    (Once the water boils, add cold water to make the noodles more elastic.)
  14. Wash the cooked noodles in cold water.

 

Once plated, the unusual-looking Pear Noodles is completed!

  1. The pear noodles .. I was totally surprised by it lol
    but their reaction while eating it made me really curious how it tastes .. sadly can’t taste it coz we don’t have Korean pears here .. just very few Asian products TT

    1. Ooh, where do you stay? Maybe you could make do with red bartlett. It’ll be a little different, because Korean pears are exceptionally juicy but I guess you could try to tamper with a bit of pear juice if you have.

    1. Yeah… you didn’t miss anything. I didn’t put out an announcement. I was kind of in a dilemma whether I wanted to continue with a 1 Night 2 Days without Yoo PD and all the staff that went on strike for the sake of free and honest journalism…
